Cook bacon slices in a large skillet over medium heat until crip and golden, around 8 minutes. With a slotted spoon or tongs, transfer slices to a plate lined with paper towels. Pour fat into bowl and set aside.
2. Spread 1 tsp mustard on bottom half of each baguette. Add 1 tsp of Date Spread on top of mustard and lightly spread. Place 2 bacon slices over mustard and Date Spread. Top bacon with 5 pear slices and 2 oz of Stilton. Finish with remaining baguette.
3. Brush both sides of each sandwich with bacon fat. Add sandwiches to skillet on medium heat, continually pressing sandwiches with spatula until cheese begins to melt and bread begins to toast (about 4 minutes on each side).
