Ingredients:
- 3/4 cup Renieris Estate Extra Virgin Olive Oil
- 1 1/2 cup All-purpose flour
- 2 tsp Baking powder
- 1 cup Granulated sugar
- 1/2 tsp Salt
- 3 Eggs
- 1/4 cup Milk
Directions:
- Preheat oven to 350° F & lightly oil a loaf or cake pan
- Mix Flour, baking powder & salt in one bowl
- In another, beat sugar & eggs until fluffy
- Gradually beat in the milk, then the EVOO
- Add wet ingredients to dry & fold until combined
- Bake 40 minutes until golden brown
- Allow to cool before serving
- TIP: add chopped pistachios and lemon zest when combining ingredients to add more Mediterranean flavor!
