Olive Oil Cake

  1. Preheat oven to 350° F & lightly oil a loaf or cake pan
  2. Mix Flour, baking powder & salt in one bowl
  3. In another, beat sugar & eggs until fluffy
  4. Gradually beat in the milk, then the EVOO
  5. Add wet ingredients to dry & fold until combined
  6. Bake 40 minutes until golden brown
  7. Allow to cool before serving
  8. TIP: add chopped pistachios and lemon zest when combining ingredients to add more Mediterranean flavor!
