Quality Assurance

I found a pit inside one of your pitted olives, is this normal?

FOODMatch is proud to have one of the lowest olive pit ratios in the industry and we continuously monitor our production processes in order to maintain these low ratios. Processes to eliminate pits from the final product include manual checking, floatation tanks, and x-ray detection. Our average pit occurrence is between 0.05 and 0.1%, with a maximum tolerance of 0.25% by count. Understanding that pits are inherent to olives, there is no guarantee of 100% eradication of pits/pit fragments from the final product even with the best practices in place, but it is something we take very seriously. Our product labels contain the appropriate pit warnings and disclaimers to account for the potential of a very limited number of pits/pit fragments that may possibly occur within the final product, which fall far below the FDA tolerance of 1.3% by count.

The lid on my jar is popped and/or didn’t make a popping sound when opened. Is it safe to use?

Sometimes shipping and handling during transit with changes in altitude pop the lids in isolated occurrences (the push button top pops), but it’s not a production issue. Due to the chemical characteristics of this product it does not support pathogenic growth, therefore there is no food safety risk. However, it will support yeast and mold proliferation after exposure to the environment/oxygen. While most of our products are inherently non-GMO, please refer to the “Non-GMO Project” seal found on many of our retail products, which verify that no genetically modified organisms are used.

Some Halkidiki olive varietals inherently have this purple/reddish coloring in the center. This purple/reddish center being present is based on certain factors such as the growing region of the olives and the time of the year the olives are harvested.

Are your products non-GMO?

While most of our products are inherently non-GMO, please refer to the “Non-GMO Project” seal found on many of our retail products, which verify that no genetically modified organisms are used.

What is the best way to remove grape leaves without damaging every one?

In order to remove the leaves with minimal damage, we recommend pulling out an entire bundle of leaves one at a time. There are typically three bundles of leaves containing 15–20 grape leaves. It is best to remove the first bundle by positioning a finger between the jar and the bundle, pressing down, and slowly pulling out the entire bundle. Once the first one is removed, the jar will not be as tightly packed and you should be able to pull out the other leaves easier.

Can I freeze my olives?

Freezing is an option, however there is a risk of the product’s texture being negatively affected resulting in a softer product. If you choose to freeze olives we recommend putting the product in a sealed container with as much of the air removed as possible.

Are your olives pasteurized?

All retail jars are pasteurized.

Are any items you sell certified halal?

No, not at this time.

Are any items you sell certified kosher?

We offer a few select bulk olives and pestos that are certified kosher on the olive bar. Additionally, our Divina jars of capers, roasted tomatoes, and pepperoncini are certified kosher; however, at this time none of our Divina olives in jars are certified kosher. All of our kosher certified items bear the seal of the certifier on the label. You can search for kosher products under the “Attributes” dropdown menu on the “Ingredients” page on our website.

Why is the rice in my Dolmas brown/beige?

Rice that is free in the tins can become brownish/beige due to the sterilization process undergone by the tins.

Why is the rice in my dolmas pink?

A pinkish color of the rice is occasionally observed in the dolmas, which is the result of color transfer from the onion into the rice within the rice mixture. Additionally, this pinkish color can also transfer to the starch that sometimes forms a thick residue in the tin. There is no food safety issue associated with this occurrence.

What spices are used in your products?

Our spices fall within the definition of the FDA, which may include any of the following:

allspice, anise, basil, bay leaves, caraway seed, cardamon, celery seed, chervil, cinnamon, cloves, coriander, cumin seed, dill seed, fennel seed, fenugreek, ginger, horseradish, mace, marjoram, mustard flour, nutmeg, oregano, paprika, parsley, pepper, black; pepper, white; pepper, red; rosemary, saffron, sage, savory, star aniseed, tarragon, thyme, turmeric.

While we don’t share the exact contents of the spice mixture in our products due to the proprietary recipe, please feel free to reach out if you have any concerns.

Are your olives processed with lye?

We have an extensive product line which includes various types of olives and different curing methods dependent on the type of olive. The majority of green olives on the market are cured using an alkaline wash (also known as lye). This processing aid is the tool best suited for curing green olives because:

  1. It causes the hard outer layer of green olives to become more porous without destroying the texture of the meat. This is critical because it allows the olive to release oleuropein, which is the bitter element that makes raw olives picked off the tree unpalatable.
  2. It preserves the color of green olives.

There are some green olives available on the market that are solely fermented. However, the flavor, color and texture do not compare to their lye-cured counterparts. Other olives, such as our Divina Kalamata olives, mature on the tree (turning dark) and are cured solely via fermentation for about 4 – 6 months; there is no use of lye. The black beldi varietal is another example – these olives are dry cured with salt and ferment in barrels for about 4 months. Afterward, they are rinsed and dressed with oil. Again, no lye is used in this process.

What is the shelf life of your retail products?

Depending on the specific item and the storage conditions after opening, the shelf life of the product may vary. For best results we recommend refrigerating after opening and minimizing cross-contamination to keep the product free from yeast and mold growth. My Divina Dolmas has a jelly-like layer—have they gone bad?

What you discovered is starch separating from the rice, which over time thickens with the oil in the product. Rest assured, this is completely food safe and only effects the product aesthetically. This has been observed to occur when storing the product in refrigeration over long periods of time. Therefore, we recommend storing the product in refrigeration only after the tin has been opened. Before serving, we recommend removing the dolmas from the tin and slightly warming them or setting them out at room temperature beforehand.

Where are your ingredients sourced from?

Short answer? All over. FOODMatch sources product primarily from the Mediterranean, but also Peru and the US, just to name a few. Within these areas, FOODMatch works primarily with small farms and farmers. It’s our way of keeping our production process simple, authentic and traceable. Working with skilled growers on independently owned farms benefits the long-term health of the crop. We have been working with many of the same farms since our start nearly 20 years ago.”
