Grilled artichokes with lemon garlic butter are reminiscent of the classic escargot appetizer. More modern, approachable and vegetarian, this dish offers a broader appeal than the ubiquitous French dish.
Ingredients:
- 6 tbsp butter
- 1/4 cup Divina Roasted Garlic Cloves, drained
- 1 lemon, juice and zest set aside
- 1 tbsp parsley
- 2 cups Divina Grilled Artichoke Halves, drained
- salt, to taste
Directions:
- Heat butter in a small saucepan over medium low.
- Add garlic and simmer until fragrant.
- Remove from heat and add lemon juice, zest, and parsley. Taste for salt and set aside.
- On a grill or hot skillet, heat grilled artichokes on high until charred and heated through.
- Drizzle lemon garlic butter over hot artichokes and serve.
