Roasted Caprese Salad

  • 3/4 cup DIVINA Roasted Red Tomatoes
  • 8 oz Mozzarella bocconcini cheese, halved lengthwise
  • 1 tbsp Red onion, thinly sliced
  • 1/8 tsp Red pepper flakes
  • 2 tbsp Extra virgin olive oil
  • Fine sea salt
  • Fresh basil
  1. Arrange the mozzarella and tomatoes on a serving platter
  2. Season with salt
  3. Sprinkle the onion and red pepper flakes on top
  4. Drizzle the olive oil across the entire surface
  5. Tear the basil leaves and arrange over the salad
  6. Best if cheese and tomatoes are served at room temperature
