Precooked and seasoned chickpeas make up the protein and primary flavor profile in this Mediterranean diet-approved dish. An excellent labor saver, our Mediterranean chickpeas come packed in a flavorful marinade that can be used in dressings and sauces. Light enough for a starter or satisfying enough for a main, this dish is perfect served as-is or made extra filling by adding protein like chicken, salmon or shrimp.
Ingredients:
- 2 cups Divina Chickpeas in Mediterranean Marinade, marinade drained and reserved
- 1 pint cherry tomatoes, diced 1/4"
- 1 cucumber, diced 1/4"
- 1 green bell pepper, diced 1/4"
- 1 small red onion, diced 1/4"
- 1 cup Divina Kalamata Olives, pitted and sliced
- 1 cup feta, crumbled
- 1 lemon, cut into wedges
- 1/4 cup Divina Extra Virgin Olive Oil, or to taste
- salt and pepper, to taste
- chopped parsley, to taste, for garnish
Directions:
- Combine marinade, olive oil, and salt and pepper to taste.
- Toss salad ingredients in a large bowl and dress with marinade mixture.
- Arrange on plates, garnish with parsley, and squeeze lemon over plated dish to taste.
- Add additional protein or serve as-is.
