This salad is a great starter to share or a light main dish for one, featuring labor-saving Divina Grilled Artichokes and Roasted Piquillo Peppers. We've done most of the work so you can focus on the plate.
Ingredients:
- 8-10 Divina Grilled Artichoke Halves, drained
- 8-10 Divina Roasted Piquillo Peppers, sliced thick
- 3 cups arugula
- 2 oz manchego, sliced
- 1 tbsp shallots, diced
- extra virgin olive oil, to taste
- lemon juice, to taste
- salt and pepper, to taste
Directions:
- Layer plate with arugula.
- Top with artichokes, peppers, and cheese. Garnish with shallots.
- Drizzle with olive oil and lemon juice, seasoning with salt and pepper to taste.
