Ingredients:
- 1 cup
DIVINA Mushrooms Marinated with Teriyaki, drained (reserve 3 tbsp marinade) - 1/4 cup Extra virgin olive oil
- 2 cloves Garlic, chopped
- 2 cups Rotisserie chicken, shredded
- 1 cup Snow peas
- 1 1/2 cups Pineapple chunks
- 2 cups Steamed white rice, pre-made
- 3/4 cup Cashews, roasted, unsalted
- 1/4 cup Green onions, thinly sliced
- 1/4 cup Cilantro leaves
- 2 Red fresno chiles, thinly sliced
Directions:
- Add 1/3rd each of oil, ginger, and garlic to large sauté pan and heat over medium high
- When oil begins to sizzle, add chicken, mushrooms, and 1 tbsp of reserved marinade and sauté until heated through; set aside
- Repeat process with snow peas and pineapples
- Serve with rice and cashews, green onion, cilantro, and chiles for garnish
