Green Beans Sautéed with Roasted Red Tomatoes

  • 1 cup DIVINA Roasted Red Tomatoes, drained (reserve 3 tbsp marinade)
  • 1 lb Fresh green beans, cleaned, trimmed
  • 1 Shallot, thinly sliced
  • 1/2 cup Walnuts, chopped
  • 1/2 Lemon
  • 2 tbsp Fresh parsley, chopped
  • Salt & freshly ground pepper
  1. Bring a large pot of salted water to a boil then add green beans
  2. Bring back to a boil and cook until beans are barely tender, about 3-5 minutes
  3. Drain and rinse with very cold water
  4. Heat tomato marinade in a large sauté pan over medium-high heat then add shallots and season with salt and pepper
  5. Cook shallots until they soften and start to brown, about 4-5 minutes
  6. Add tomatoes and sauté another 3 minutes before adding blanched green beans and walnuts
  7. Season with salt and pepper and sauté until beans are hot, about 3-5 minutes
  8. Just before serving, squeeze in lemon juice and toss in fresh parsley
