Roasted Tomato & Avocado Toast

  • 1 cup DIVINA Roasted Red Tomatoes (reserve marinade)
  • 1 Lemon, zest & juice
  • 6 Basil leaves, very finely chopped
  • 4 slices Whole grain bread
  • 2 Ripe avocados
  • Extra virgin olive oil
  • Kosher salt & freshly ground black pepper
  1. In a small bowl, rub together lemon zest, basil, and 1 tbsp salt until the basil is fully incorporated
  2. Brush sliced bread with tomato marinade, season with basil-salt and black pepper, and grill or toast
  3. Slice avocados in half and remove pits
  4. Scoop 3 avocado halves into a bowl along with 2 tbsp EVOO and mash with a fork; season with salt, pepper and lemon juice
  5. Thinly slice remaining avocado
  6. Spread mashed avocado across toasts and top with sliced avocado and roasted tomatoes
  7. Season with basil-salt, black pepper and drizzle with EVOO
