Ingredients:
- 1 cup Peppadew Sweet Piquante Peppers, drained, quartered
- 1 Eggplant, sliced into 1/4" rounds
- 4 oz Herbed goat cheese, soft
- 1/4 cup Milk
- 1 loaf Foccacia bread
- 1 cup Arugula greens
- Extra virgin olive oil
- Salt & pepper
Directions:
- Preheat oven to 450° F
- Brush eggplant with olive oil and season with salt and pepper
- Arrange eggplant in a single layer on baking sheet and bake until golden and cooked throughout, about 20 minutes
- In a small bowl, mix goat cheese with milk. Slice focaccia in half horizontally. Spread both sides with goat cheese spread.
- Top bottom half with arugula, followed by eggplant, and peppadew
- Close focaccia and slice into individual sandwiches
