Egg Salad & Cornichon Sandwich


Ingredients:
  • 1/2 cup DIVINA Cornichons, drained, chopped
  • 6 Eggs, hardboiled
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Fresh parsley, chopped
  • 2 tbsp Chives, chopped, plus additional for garnish
  • 4 slices Whole grain bread
  • Salt & freshly ground pepper
Directions:
  1. Separate egg whites from yolks
  2. In a bowl, smash yolks and mix with olive oil until creamy
  3. Chop whites and add to bowl, along with cornichons and herbs
  4. Stir to combine and season with salt and pepper
  5. Garnish with fresh chive
