Ingredients:
- 1/2 cup DIVINA Cornichons, drained, chopped
- 6 Eggs, hardboiled
- 3 tbsp Extra virgin olive oil
- 2 tbsp Fresh parsley, chopped
- 2 tbsp Chives, chopped, plus additional for garnish
- 4 slices Whole grain bread
- Salt & freshly ground pepper
Directions:
- Separate egg whites from yolks
- In a bowl, smash yolks and mix with olive oil until creamy
- Chop whites and add to bowl, along with cornichons and herbs
- Stir to combine and season with salt and pepper
- Garnish with fresh chive
