Ingredients:
- 1/2 cup DIVINA Roasted Red Tomatoes
- 1/2 cup DIVINA Roasted Yellow Tomatoes
- 3/4 cup DIVINA Pitted Kalamata Olives, drained, rinsed and cut into quarters
- 1 cup Wheat bulgur
- 1/2 cup Celery, chopped (use inner ribs)
- 1/2 cup Scallions, chopped
- 2 tbsp Fresh lemon juice
- 2 tbsp Extra virgin olive oil
- 3/4 tbsp Fine sea salt
- 1/4 cup Mint leaves, torn, lightly packed
Directions:
- Mix the bulgur with 1 1/2 cups hot water. Set aside 1 hour. Stir from time to time.
- Combine the bulgur with the olives, celery, scallions, lemon juice, olive oil and salt
- Divide among individual dishes or a shallow serving bowl
- Arrange the tomatoes on top of the bulgur
- Scatter the mint over the tomatoes
