Roasted Tomato & Kalamata Grain Bowl

  1. Mix the bulgur with 1 1/2 cups hot water. Set aside 1 hour. Stir from time to time.
  2. Combine the bulgur with the olives, celery, scallions, lemon juice, olive oil and salt
  3. Divide among individual dishes or a shallow serving bowl
  4. Arrange the tomatoes on top of the bulgur
  5. Scatter the mint over the tomatoes
